Spiro Karachopan was born in 1954 in Greece. His father was a farmer and his mother took care of him and his 3 brothers and 2 sisters. In 1970, as a young teenager, he began working on cruise ships as an apprentice to various chefs. In 1973, Spiro came to the United States with $32.00 in his pocket and a dream. Thereafter, he refined his cooking skills by working for various restaurants in Manhattan and Long Island, New York. Seven years later, he opened the Sea Basin Restaurant.
